Taco Tuesday!

I love a good taco Tuesday and living here in southern California, there's no shortage of good options!
Now while my fiance and I love to go out for taco Tuesday, we do occasionally stay in and make our own little fiesta right at home.
Here is a recipe I love to make (even not on Tuesdays), TACO SALAD! 
Its easy and so delicious.


Ingredients:

  • Salad
  • Tortilla chips
  • Salsa
  • Mayo
  • Cheese
  • Ground beef
  • Taco seasoning
  • Olives
  • Kidney beans, drained
Brown ground beef until fully cooked.
Add taco seasoning (follow instructions on packet).
Add kidney beans. For this step, add as little or as many as you want, no measuring in this recipe!
Also, add some tortilla chips at this time. Again, as ma as you want.

Mix well!

While the meat mixture is cooking, you can make the dressing for the salad.
In a small bowl, mix salsa and mayo together.
I usually start with less mayo, taste, then add more if needed. It really just depends on if you want a more salsa taste or a bit more creamy taste.

Now it's time to assemble your taco salad!

Start by putting the salad in bowls.

Next, spoon meat mixture on top of salad.

Add your dressing.

Finish with some black olives, a handful of crushed up tortilla chips, and cheese (if desired). 
As you can see, I left the cheese off mine but since my future husband loves cheese, I piled it on his!

Serve with Margaritas or ice cold beer!
