I really enjoy some good old fashion meatloaf dinner. I got this recipe from an old co-worker and it is so delicious! It is the perfect individual portion plus every bite has that yummy crispy edge!
Tasty and easy!
Ingredients:
- 2 lb ground beef
- 3 eggs, lightly beaten
- 1 1/2 cups bread crumbs, plain
- about 10 or so shakes of Worcestershire sauce
- 4-5 oz tomato paste
- 1 cup chopped onion & garlic
- a couple shakes garlic powder
- salt & pepper to taste
- ketchup
Preheat oven to 350 degrees
In a large bowl, combine meat, eggs, bread crumbs, Worcestershire sauce, tomato paste, onion, garlic powder, salt & pepper
Mix well (I used my hands for this part. It's the easiest method for mixing in this case)
Spray muffin tins with nonstick cooking spray or olive oil
Divide meat mixture evenly among tins (you can fill them over the top & round it off since they won’t rise)
Spread a light coating of ketchup on each mound
Cover with tin foil & bake for about 30 minutes
Uncover & bake for another 20 minutes or so (or until meat is fully cooked)
Mashed potatoes:
Peel potatoes and chop into quarters.
Place chopped pieces into a pot with water.
Bring to boil and lightly salt.
Cook until potatoes are tender when pierced with a knife or fork.
Drain and transfer into the bowl of an electric mixer. (You can do this part with a potatoes masher as well.)
Add some warm milk and butter.
Mix. Add salt to taste.
I served the potatoes and meatloaf with peas in a light butter sauce and a salad with my Homemade French Vinaigrette to complete the meal.
